The Apertif’s king: Aperol Spritz

- 3 parts of Prosecco
- 2 parts of Aperol
- A squeeze of soda
- ½ slice of orange
Preparation:
The preparation of the cocktail simply consists in mixing up all the ingredients in a glass, after filling it with some ice to keep the prosecco cool. Is served in a wine glass or rock glass.

Rossini: a strawberry and prosecco cocktail
The Rossini cocktail is a variance of the Bellini, prepared with fresh strawberry puree and prosecco. It’s the perfect choice for a spring-like drink of fresh and delicate taste.
Ingredients:
- 1 part of strawberry juice
- 2 parts of Prosecco
- Some strawberry for the final decorations
Preparation:
First, we need to prepare the strawberry puree, and to do that you’ll simply need to wash the strawberries, cut them in small pieces, whip them and pour them through a fine sieve. Then, put together the puree and the prosecco in a flute and you’re done. This cocktail is served cool, but with no use of ice cubes in the glass. Finally, to exalt the strawberry flavour you can add some lemon juice.
Pairings:
The ideal pairing would be to combine it with some cold cuts, not too seasoned, or young cheeses.
Hugo: cocktail with prosecco, lime and mint
The Hugo cocktail originates form the Trentino alto Adige region. It is considered to be an alternative to the Spritz, but don’t underestimate the power of this cocktail of fresh taste and unique flavours, that differentiate it from other drinks.
Ingredients for 2 servings:
- 30 cl of prosecco
- 4 cl of lemon balm or elderberry syrup
- 4 cl of soda
- 3-4 mint leaf
- a slice of lemon
Preparation:
The proceeding is very simple: fill a glass with ice cubes and then add the lemon balm or elderberry syrup, the Prosecco and finally the soda. After mixing up all the ingredients add some mint’s leaf. Top with the slice of lemon. Finally, to enhance the flavours, try to add some ginger.
Pairings:
For this cocktail we suggest some fish-based finger food and spicy snacks.
Mimosa: cocktail con prosecco e succo d’arancia
The mimosa cocktails is one of the most loved during women’s day, because of its bright yellow colour that reminds of the mimosa flowers.

- 2 parts of Prosecco
Preparation:
The realisation of this cocktail is, as well as the others, very easy. It will only require you to mix the ingredients and serve them in a flute. There is no need for ice cubes to be added in the glass, but it should be served cool.

It can be paired with any fish-based dish and generally with light meals. As well as all the previously mentioned drinks, is well paired also with various snacks and finger food.
